Over at Byron Fermentary, roasted beetroot miso is in season. There is a lot you can do with miso especially at this time of year – it’s perfect in soups and broths, or even with roasted vegetables. From a health perspective, miso offers many benefits – it is full of nutrients and it is also a probiotic which means it is great for gut health. What we love about Katerina’s stall and her ethos is that all of her produce is seasonal and she kindly reminds us all that “we have forgotten that food should be medicine, and should help us nourish our bodies and souls” – and how true this is!
