Citrus tip

To extract the maximum amount of juice from citrus, roll it firmly on thebench before squeezing. If grating, only use the sweetish coloured part of the skin.

Orange and Almond Cake Recipe
If you feel adventurous and want a really quick, easy recipe you might like to try my Orange and Almond Cake! It’s my favourite gluten free cake and in made entirely in a blender! Simply boil two large oranges for about 20 minutes and then blend (yes skin and all) to a smooth consistency. When this is cool simply add 225 grams of coconut sugar, 6 eggs, 185 grams of almond meal and about 50 grams of coconut flour mixed with
one teaspoon of baking powder. Mix well before pouring into a 23cm round cake tin and bake in a moderate oven for 45 -60 minutes. Enjoy with lashings of rich mud cream!
