Another versatile vegetable – celery has arrived and there is plenty! This tasty and versatile vegetable. It’s great as a snack, as an addition to soup, chopped up in a salad, etc. T
Organic celery has arrived at the market with all three organic market garden stalls now picking this VERY popular vegie.
So why has it become so popular? Well most of you would have heard of the Medical Medium’s celery juice cure and this alone has created a huge demand for celery over the past 9-12 months. Enough said. Like all vegies celery has lots of great nutritional qualities – it is an excellent source of antioxidants and beneficial enzymes, in addition to vitamins and minerals, such as vitamin K, vitamin C, potassium, folate and vitamin B6 (info source: https://draxe.com/nutrition/vegetables/benefits-of-celery/
… “ so like any freshly harvested vegetable my view is simply enjoy it however you like. I love it in casseroles, soups and broths as it adds an extra special flavour to these that ONLY celery brings!. I also love to include it in my daily green smoothie; on a snacking plate with my favourite dips and even as an after school snack filled with peanut butter or almond butter. Like all fruit and vegies it is best when in season and super fresh so buying from our farmers means it has been picked the day or so before, very low road miles and is crispy fresh directly from their farm.
In his Plenty More book Yotam Ottolenghi has a recipe for “Sort-of-Waldorf” in which he includes red cabbage, celery and granny smith apples with a red onion and hazel nuts served with soured cream, dill, mayonnaise and sour cherries.
