What’s GOOD at the Market this Week?

Yesterday as my 4 year old grandson munched happily on a handful of snow peas and came back for more it reminded me of the joy derived from the special crunch of freshly picked snow peas. It is a very particular crunch when the snow peas are so fresh. Road miles and storage changes the texture immensely. Every week my appreciation of the distinctive culinary pleasures of local freshly picked produce continues to grow.

Snow peas are so versatile and can be enjoyed in many ways. How about a carrot, snow pea and ginger slaw? See my adaptation of the slaw recipe below.

A snow pea salad with radish and cottage cheese or lightly steamed snow peas with roasted flaked almonds dressed with a honey, butter and lemon juice sauce are just a few more ways to enjoy snow peas?

Recipe of the week: Carrot, snow pea and ginger slaw

Ingredients:IMG_1869

  • 1/4 wombok (Chinese cabbage), finely shredded or any available cabbage
  •  200g snow peas, trimmed, cut into matchsticks
  •  2 carrots, peeled, cut into matchsticks or grated
  •  5cm piece golden ginger, peeled, cut into matchsticks or grated
  •  2 tablespoons good quality olive oil
  •  2 tablespoons fresh lemon juice
  •  1 tablespoon soy sauce or tamari

Method:

  • Combine the cabbage, snow pea, carrot and ginger in a bowl.
  • Whisk the oil, lemon juice and soy/tamari sauce in a jug or a bowl until well combined.
  • Pour over cabbage mixture and toss to combine.
