Pancakes served with Bananas, Dragon Fruit and Cream

1 ½ cup plain flour (gf: 1 cup buckwheat flour + ¼ cup coconut flour + ¼ cup tapioca flour)

2 ½ teaspoons baking powder

1 teaspoon apple cider vinegar

2 eggs

1 cup milk (or milk substitute – whatever your preference) or more as required to make a smooth consistency.

Mix all together by beating vigorously by hand

Serve topped with sliced Everest Farm lady finger bananas and Rainbow Fruit Flats dragon fruit, a sprinkling of cinnamon and drizzled with Caldera honey.
