Carrot, snow pea and ginger slaw


  • 1/4 wombok (Chinese cabbage), finely shredded or any available cabbage
  •  200g snow peas, trimmed, cut into matchsticks
  •  2 carrots, peeled, cut into matchsticks or grated
  •  5cm piece golden ginger, peeled, cut into matchsticks or grated
  •  2 tablespoons good quality olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon soy sauce or tamari
  • Method:
    • Combine the cabbage, snow pea, carrot and ginger in a bowl.
    • Whisk the oil, lemon juice and soy/tamari sauce in a jug or a bowl until well combined.
    • Pour over cabbage mixture and toss to combine.
