Carrot, snow pea and ginger slaw
Ingredients:
- 1/4 wombok (Chinese cabbage), finely shredded or any available cabbage
- 200g snow peas, trimmed, cut into matchsticks
- 2 carrots, peeled, cut into matchsticks or grated
- 5cm piece golden ginger, peeled, cut into matchsticks or grated
- 2 tablespoons good quality olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon soy sauce or tamari
- Method:
- Combine the cabbage, snow pea, carrot and ginger in a bowl.
- Whisk the oil, lemon juice and soy/tamari sauce in a jug or a bowl until well combined.
- Pour over cabbage mixture and toss to combine.
