Winter Soup Recipes and Koobideh!

Produce Update:

The market is full and overflowing with wonderful winter vegetables especially winter greens. One of my favourites at this time of year is  cauliflower in this quick and easy, tasty soup:IMG_0175

Cream of Cauliflower and Broccoli Soup

One large leek sliced and rinsed, lightly sautéed in a combination of butter and coconut oil with 2 cloves of crushed garlic.

Add 1 litre of chicken stock.

Add the head of one cauliflower and a small to medium head of broccoli. Bring to the boil and simmer until vegies are tender.

Season with salt and pepper to taste.

When slightly cooled add a cup pure cream and blend with a stick blender. Add more liquid to your preferred consistency and blend this in.  Before serving sprinkle with parmesan cheese.

Wonderful served with croutons made from a crusty loaf of Crabbes Creek Wood Fired sour dough.

Eggs are still in short supply and this is likely to continue during the cooler weather. Hass avocados are more prolific so enjoy an avocado every day – such wonderful healthy oil!

TTNJ – Persian Koobideh and Persian Chai with cardamon

This week we welcome Pegah Pourkarimi and Ben who bring to the market a unique cultural experience with Koobideh – sometimes called a kebab koobideh. Koobideh refers to the style of meat preparation – placed on a black flat stone and smashed by a wooden mallet. Traditionally koobideh was made with ground lamb however ground lean beef or a combination of both can be used.

At the market Pegah and Ben will be cooking a lamb and  beef skewers served in a pita beside locally grown grilled tomato, onion and basil with saffron butter and sumac.imgres

TTNJ is also offering Persian chai tea with cardamom.

Children’s entertainment – Shorty Brown – the hilarious and unconventional balloon lady will grace the market with her motto – Let’s Play, let’s Laugh, let’s have a lot of fun!

 Lee’s Chicken Noodle Soup (with Pumpkin soup as an optional extra).   Lee said that “coming from a Jewish family I was brought up on chicken noodle soup made by my Nana. My take on chicken soup is a little different to hers. If you decide that you don’t want chicken noodle soup you can always use the stock as a base for your pumpkin soup”.   You need: 1 slowcooker, 1 whole chook (drumsticks and/or marylands will also suffice), 1 carrot, 1 piece of celery, 1 onion, 1 sml garlic bulb, cracked & 1 small handful of salt.   Fill your slow cooker a third with water, turn on to low and place all these ingredients in whole. Leave to cook for 4 hours. After 4 hours take everything out of the slow cooker and allow to cool.   Place the chook (or pieces) and the slow cooker pot in the fridge over night.   In the morning, scrape off and discard the thin layer of fat that has formed on the top of the broth before using. Turn the slowcooker on to low and add any veg that you would like to add to this soup, finely diced. (my nana used to add carrots and peas). Pull the chicken meat apart and add to stock. (If you don’t wish to use the chicken meat you can simply fry the pieces in a little butter and use it in another dish). Nana used to cook up vermicilli noodles and add them also. Season to taste. Serve with crusty bread. Keep some broth aside and add it to mashed pumpkin for your simple pumpkin soup.
