Recipe to try – Thyme roasted vegies

I just love diced new season potatoes, sweet potatoes, beetroot and pumpkin spread over a baking tray sprinkled with fresh thyme and coconut oil or oil of your choice. Roast till they are soft or crisp – your choice! The flavour is superb!

Also great to include diced carrots (love roasted carrots) and zucchini. Around the edges of the tray roast whole garlic and whole onions. YUM!
