Produce Update:
Great weather for hearty soups. So this week why not add the these recipe ingredients to your list:
- Leek and Potato Soup (1 kg of diced potatoes to 2 leeks and 2 cloves garlic gently fried in about 20 grams butter). Add this to 4 cups of chicken stock plus additional water to achieve your desired consistency – maybe 2-3 cups) and season to taste. When completely cooked blend to a smooth consistency then add about a cup of cream and gently rewarm. Serve with a sprinkle of finely chopped parsley or chives or any herb of choice.
OR
- Spicy Coconut & Pumpkin Soup – my favourite – follow the link for the recipe. Photo is courtesy of the website http://eatdrinkpaleo.com
