Tuesday 3rd Update:

Oops! An update hot of the press!

No apples tomorrow – TANZO has run out.  Good news:  new season apples commence next week.

I just been advised that there won’t be any blueberries again – the weather has prevented them from picking.

Finger limes have been more successful and picked before the rain so they will be at the market tomorrow.

Monday 2nd – So ….What’s New this week?

A delicious breakfast treat and gluten free! Where: Crumbs and Stuff.

Sarah will have gluten free crumpets (heated) served with a selection of her preserves – sweet or savoury – you can choose.

Otto and Lynette have let me know that we only have about two more weeks of blueberries so return your buckets and stock up before they finish.

The good news is that the species recently planted and due to fruit mid year may produce quantities that will enable them to return to our market in June or at least early than usual.

Stallholder changes

Nudgel Nuts – Ian is away for the another week. He will be back for one or two weeks from 11th depending on sales. When the nuts run out – they run out! The good news is the new season nuts will soon be harvested.

Recipes:

Coconut prawns (or chicken wings) with mango sauce.

Blitze one mango with 2 tablespoons of a good vinegar, 1 teaspoon of grated ginger and honey to taste in a food processor or with a stick blender.

Roll prawns or chicken wings in a mixture of soy sauce (or tamari), honey and 2 teaspoons of chilli olive oil (from Spice Palace) – add more virgin olive oil to dilute if the chilli is too strong. Then roll in coconut pressing firmly to ensure a good covering. Bake for about 5-7 minutes (longer for chicken wings) and serve on the mango puree with heaps of steamed greens. Delicious!

Mango is also delightful with Nimbin Valley Dairy haloumi and a salad of lightly tossed micro greens with finely sliced cucumber and capsicum. A sprinkle of macadamia dukka (from Spice Palace) finishes this of beautifully.
