Fennel and some great fennel based recipes.

What’s GREAT at the Market this Week?

Hale the hearty fennel! This sometimes under appreciated vegie is simply delicious roasted in a similar way to roasting cauliflower and broccoli florets. Roasted vegies are my favourites throughout the cooler months as roasting seems to bring out a delicious sweet rich flavour in most

vegies. To roast fennel simply cut off the stalks and slice the bulb into 2 cm thick wedges. In a bowl coat the fennel wedges with GrumpyGrandma’s olive oil (from Spice Palace) – approx. 1 tablespoon per bulb and 1 teaspoon per bulb of balsamic vinegar. If you arrange these in a baking tray in a single layer they should be roasted in approx 30-40 minutes. Roasted, fennel caramelizes at the edges and loses its crunch but takes on a delicious flavour enhancing any meal. YUM!

Jamie Oliver’s slow roasted fennel

The licorice notes so strong in raw fennel are somewhat subdued when it is oven roasted or caramelised on the stove top. I love fennel finely shredded or shaved and sprinkled over a salad. It adds a great flavour to a tossed salad. Add a few orange or mandarin segments and some pecan pieces and your salad will sing

Fennel bulbs are available at the Jumping Red Ant

stall although only in small quantities at the moment. In June Summit Organics will have organic fennel – it is almost ready to pick!

Stall Holder changes:

  • The Murwillumbah Mens’ Shed will join us this week with their camphor laurel boards.
  • Vietnamese Lotus – back in two weeks as Mal and Laura enjoy their travels.

COMING SOON and CHANGES – Seasonal produce updates:

  • Fingers crossed and weather permitting Blueberry Fields returns next week.
  • Narbey’s Best Avocados will be absent during June as they wait for their Hass crop to be ready for harvesting. Doug knows to be patient and that is why his avocados are always so delicious.

RECIPE: Fennel and Gourmet Mushrooms

1 bulb fennel sliced thinly

500 grams oyster mushrooms (or any combination from Wollumbin Gourmet Mushrooms) sliced

Parsley – a handful chopped

Heat 2 tablespoons of oil of choice (I like a combination of coconut and butter) in pan and add in all ingredients cooking on a medium heat until tender. Add salt and pepper to taste

Weather: It may be partly cloudy with temperatures ranging from an early 9-12 degrees to a warm day in the low to mid 20’s.
