The perfect spring salad includes the crunch of sweet red capsicum and crisp cucumbers diced and tossed with rocket, mixed lettuce and a good splash of olive oil and lemon or even balsamic vinegar. Cooling and nourishing!

Recipe of the week:
Cucumber and Tarragon Soup
This refreshing soup is simply made in a blender.
Place a couple of large chilled cucumbers, fresh tarragon leaves, garlic, freshly squeezed lemon or lime juice in a blender and blitz until smooth. Add about a cup or so of yoghurt or kefir milk. Blitz. Add olive oil and blitz to achieve a smooth consistency then season with salt and pepper. Serve topped with a sprinkling of black pepper or coriander. If you are a coriander fan then add coriander to the blender in the first step.
