The perfect spring salad includes the crunch of sweet red capsicum and crisp cucumbers diced and tossed with rocket, mixed lettuce and a good splash of olive oil and lemon or even balsamic vinegar. Cooling and nourishing!

Bio Organic Farm has sweet red capsicum and Lebanese cucumbers grown in their hot houses.

Recipe of the week:

Cucumber and Tarragon Soup

This refreshing soup is simply made in a blender.

Place a couple of large chilled cucumbers, fresh tarragon leaves, garlic, freshly squeezed lemon or lime juice in a blender and blitz until IMG_2383smooth. Add about a cup or so of yoghurt or kefir milk. Blitz. Add olive oil and blitz to achieve a smooth consistency then season with salt and pepper. Serve topped with a sprinkling of black pepper or coriander. If you are a coriander fan then add coriander to the blender in the first step.

So simple and so refreshing! ENJOY.
