Produce Update:
Rocket is prolific at the moment. Being a cool-weather crop it is now available at most stalls in good sized bunches. Long days and warm weather make it bolt, or flower, and bring an unpleasantly bitter flavour to the leaves so enjoy it now in salads and green smoothies.
Rocket is grown year-round hydroponically by The Gourmet Salad Hut.
With its sharp zesty flavour rocket it is one of my favourite greens. Try a strawberry and rocket salad with lemon ricotta or a rocket pesto is wonderful with a range of pasta or rice cracker!
One of my favourite ways to use rocket at this time of year is with other mixed greens so here is my Rocket, feta, pecan and beetroot salad. Take a good bunch of rocket and other mixed salad greens and tear into a bowl (I love to include torn coriander, mint and cos), orange segments cut into pieces, cubes of beetroot roasted in coconut oil. Assemble all these and scatter Tweed River Pecans over the top. Dress this with a citrus/olive oil dressing and then finish by crumbling some Nimbin Valley Dairy goat feta over it all! Simply divine! When rocket is not available I use use very finely shredded kale and sometimes I fry the finely shredded kale in a little coconut oil and garlic!
Chard and other greens including lettuce grow year-round in
temperate areas but are best in the sub tropics in winter and spring.
Like all cooking greens, chard turns bitter when the weather gets too hot.
Lemons are at their juicy best from winter into early summer.
Radishes are at their crunchy best in spring so watch out for these in coming weeks.
What’s New this week:
Murwillumbah Showground Trust will be launching its Waste Management Plan at the Murwillumbah Farmers’ Market this Wednesday – 20th August.
