What’s GREAT at the Market this Week?
CUCUMBERS
Cool as a cucumber! Why? Because having a high water content fresh crunchy chilled cucumbers are especially cool and refreshing. They are naturally hydrating and offer so many nutritional benefits too.
Cucumbers originated in India almost 10,000 years ago and are more popular than ever now in many recipes from around the world. We all know the traditional Greek salad! Simply combining tomato, cucumber, onion, capsicum, olives and feta sprinkled with oregano and salt we can enjoy a delicious salad daily. Whisk oil and vinegar with a dash of crushed garlic for a simple dressing and voila! Sooo good!
Why not make a cucumber and mint raita this week – cooling to the palette when e
ating hot spicy foods. Add to whisked yoghurt some coarsely grated cucumber and finely chopped mint
with salt and pepper to taste – YUM. For a more detailed recipe visit https://www.epicurious.com/recipes/food/views/cucumber-mint-raita-109803 orhttps://www.epicurious.com/recipes/food/views/traditional-indian-raita-242185
For a cool summer soup using cucumbers see the cucumber and tarragon recipe below.
In the ancient civilizations of Egypt, Greece, and Rome, cucumber was very popular and it was not limited to food. It was also praised for its beneficial effects on the skin. Full
of vitamins and minerals including silica – a trace mineral – that helps to strengthen connective tissue – cucumber is both versatile and delicious.
All the farm stalls have cucumbers so stock up this week and ENJOY!.
Recipe of the week: Cucumber and Tarragon Soup
This refreshing soup is simply made in a blender by adding in a couple of chilled cucumbers, fresh tarragon leaves, garlic, freshly squeezed lemon or lime juice and about a cup or so of yoghurt. Blitz and then add olive oil to achieve a smooth consistency. Add salt and pepper to taste. Serve topped with a light turn of black pepper and finely choppe
d coriander.
Note: If you are a coriander fan then add coriander to the blender in the first step.
MANGOES are wonderful right now too so stock up as they freeze really well. You can find these at Jumping Red Ant and Everest Farm stalls.
Also delicious and cooling this week are brekky bowls from
Chai Harem. The photo shows their favourite brekky bowl. They also have an acai bowl plus their very refreshing frappes and iced chocolate chai teas.
