What’s GREAT at the Market this Week?
Crunchy carrots freshly pulled from the ground just the day before the market are so fresh you can taste the difference.
Delicious in a carrot and ginger salad with an orange dressing or roasted (see the Roasted Carrot and Beetroot recipe below) – carrots are so versatile you can enjoy them in so many ways including carrot juice.
Did you know that carrots contain higher levels of beta carotene than any other vegetable or fruit? This converts to vitamin A.
According to mercola.com carrots provide health benefits throughout your body and this includes inhibiting cancer cell growth. There are so many health benefits that I have included a chart that summarises these for you – from www.organicfacts.net
As is true for any vegetable the fresher the better as there is less loss of their great nutritional values and of course they are more delicious when really fresh.
And don’t waste those vibrant green tops. Carrot greens can be made into a pest by simply blending with garlic, lemon juice, olive oil and Parmesan cheese.
Freshly pulled carrots are available at Summit Organics and Everest Farm stalls.
Both Doggie-Licious and Heart and Halo are at the market this week so stock up on their popular goodies.
From June onwards both these stalls will become fortnightly. Unlike fresh produce they sell products that you can buy ahead so go for it this week.
