RECIPE: Fennel with Capers and Olives

This week inspired by Yotam Ottolenghi whose book Plenty More I have just purchased I wanted to share with you a delightful recipe I am making – Fennel with Capers and Olives. Using 4 fennel bulbs and 15 (yes that is not a typo) large garlic cloves with the skin on this is a really simple but delicious recipe made on the stove top. Simply braise the fennel in olive oil in batches only

turning once and seasoning as you go. Remove fennel from the pan and add in the garlic with 1 mm of olive oil and toss for about 3 minutes until the skin is scorched all over. With verjuice (or lemon and red wine substitute) one tomato, vegetable stock, capers, olives and some thyme with the grated zest of one lemon it sounds like a nurturing winter recipe to enj

If you would like the details it is also on his website at https://ottolenghi.co.uk/…/braised-fennel-with-capers-and-o…

Many of our farm stalls have fresh fennel at the moment including Summit Organics and Jumping Red Antso enjoy this recipe with pitted olives from Spice Palace.
