Spot light is on cabbages and pork

What’s GREAT This Week?

This week we are shining the spotlight on CABBAGE. Why! Well  – cabbages are in abundance now – both red and green, and because it is such a versatile and delicious vegie if prepared accentuating its very positive qualities.

The green cabbage is such a sweet vegie that it is perfect for salads and slaws, for stir-frying and it is delightful  briefly steamed to retain is full flavour. I love streaming it with a big dab of butter on top – sublime!

Red cabbage is also delicious thinly sliced in salads – and how about a red cabbage slaw?  It is also delicious cooked with caraway seeds and a splash of vinegar making a delicious and beautiful addition to any meal.

Or even braised red cabbage with apple and dried cranberries!

If you are a ginger lover like me then you will love this recipe for Cabbage, ginger and sesame stir fry – Taste

I also use both the red and green cabbages to make fermented cabbage or sauerkraut and kimchi. I make lots while they are bountifully available and enjoy these throughout the year. Great for healthy gut biome too if that is your focus.

Fresh local cabbages are available from the following market stalls: Bio Organic Farm, Cecil Farm, Everest Farm and Jumping Red Ant.

TIP: Always look for a cabbage that is heavy for its size and have tightly packed leaves – except for the Asian style cabbages that tend to be looser.

PORK: If you love pork then you can’t do better than All Natural Meat Cos  free range happy pigs from their Doon Doon farm. These grass fed pigs are really well nurtured. All cuts are available every week.
