Produce Update:
I can feel the hint of spring on the horizon with warmer sun drenched days so we possibly only have a few weeks left to enjoy the comfort foods of autumn and winter. Soup gives the body, mind and soul comfort so here are a couple of soups to ease you into spring. How about a fresh Pea and Fennel soup or a Sweet Potato soup?
Pea and Fennel Soup
Gently fry one onion, 2 cloves or more of garlic and finely shredded small bulb of fennel – in butter or coconut oil. Add four cups of peas (fresh is always best and now is the perfect time for beautiful fresh peas) and a dash of water/chicken stock (a couple of tablespoons or more – just enough to cover the base of the pan). Lightly simmer for a few minutes until tender and then add a cup or two of milk and when warm blend with a stick blender until desired consistency. Add more milk as required or if you like a creamy rich soup add cream (to each bowl as I serve – my personal preference). Garnish with the soft tips of the fennel or mint or parsley. If inclined you could garnish with slivers of ham or freshly fried bacon!
Sweet Potato Soup
In butter or coconut oil, gently fry two diced onions, 2 cloves garlic (optional), 2 diced carrots, 2 stalks celery finely chopped. Saute until soft and then add 3 cups chicken stock or vegetable broth, one large sweet potato diced and if in season 2 diced zucchini. Cook until soft adding salt and pepper to taste. Blend with a stick blender (or food processor) adding one dessert spoon of either cinnamon or ginger (if preferred fry fresh ginger with the onion and garlic earlier).
Variation: just before blending add coconut cream.
Garnish with chopped coriander or parsley.
What’s New this week:
Long anticipated new sturdy jute Murwillumbah Farmers’ Market branded bags have arrived! For only $5 they can be purchased from stalls displaying them or where signs indicate they have them for sale and from my table at the entry to the market. They have strong sturdy comfortable handles. I just love them and have already loaded my market admin items into two!
Simply Divine Cupcakes – expanding their range!
Vishnu has made the most divine chia seed pudding with blueberry compote! It is simply divine but NOT a cupcake – a wonderful healthy portable breakfast
Healing Foods Café:
This week’s soup is a spiced pumpkin, sweet potato and carrot soup with coconut milk.
This week’s salad is spiced quinoa and carrots with greens.
Crumbs and Stuff:
Sarah has cooked up another batch of Mandarin cordial, ready for the warmer weather. The trees from whence these juicy lovelies came from have the most amazing view of Woolumbin and the Tweed Coast. Spray free, happy trees.
