What’s good this week?
In this beautiful warm weather less cooking and lots of cooling salads makes life so easy. The difference between a great salad and an ordinary one is often in the dressing. A tasty dressing can really make a salad sing.
Duska at Spice Palace has delicious olives and with a variety of tomatoes from black Russians to mini Romas at the market now is the time to enjoy a Greek salad where the secret really is in the dressing. See recipe below. Add chilled sliced or diced cucumbers – in plentiful supply at the moment – tomatoes, olives, slic
ed red onion and some torn up lettuce. Top this with crumbed Nimbin Valley Dairy feta or fried haloumi and the salad dressing below and you have the perfect nourishing and tasty lunch or dinner.
Iced chocolate chai – now that is total decadence!
The Chai Harem’s Iced Chocolate Chai was described by one customer last week as “the best thing she had ever had!!!”. Freshly ground ginger and spices, cocoa infusion and topped with rosewater cream make this a great icy cold thirst quencher!
Recipe of the week:
Greek Salad:
Tasty Greek Salad Dressing:
1/3 cup olive oil
1/4 cup red wine vinegar
1 clove garlic (more if preferred)
finely chopped oregano, parsley, and basil or if not available use ¼ tsp of each dried herb or the Greek Salad Herb mix – see link below for this recipe).
¼ tsp black pepper
2 tbls lemon juice and 1 tsp lemon zest
¼ tsp Dijon mustard
¼ tsp Himalayan salt
In a jar, mix together all ingredients and shake vigorously until well blended. Store tightly covered at room temperature
