What’s GREAT This Week?

Bursting with colour and flavour BEETROOT is incredibly versatile AND very nutritious. Some say beetroot were considered an aphrodisiac in Roman times so this week be inspired and try using beetroot in a new recipe – such as a chocolate brownie, moist beetroot chocolate cake (see our recipes page for this one), grated raw and fresh in a salad or a delicious roasted beetroot salad with goats cheese and pecans. Very popular is the beetroot and goats cheese tart using puff pastry.

Roasted beetroot is simply divine. Peel and chop into bite sized pieces, coat in coconut oil or an oil of your choice and roast at 180 degrees. It is quick and easy! Served with pulled lamb shoulder or almost any meat roasted beetroot adds a delicious sweetness to your meal.

All vegies offer nutritional benefits but if you are particularly interested in the detail then there is valuable info on the web. Here is a glimpse of just a few of the nutritional benefits of beetroot. It contains potassium, magnesiumironvitamins A, B6 and C, folic acidcarbohydrates, protein, antioxidants and soluble fibre AND research has shown that it can lower high blood pressure.

According to WebMD drinking beetroot juice increases blood flow to the brain in older people, which may be able to fight the progression of dementia, a 2010 study suggested.

Storage tip: – Do not trim the tail of your beetroot as this helps it to last longer. Bag the bulbs and store in your refrigerator. Store the leaves in a separate plastic bag and use within two days.
