What’s GREAT at the Market this Week?

Everest bananas have the greatest flavour! Will’s ladyfinger bananas are full-flavoured fattened bananas compared to the less-flavoured, slim ladyfingers that are picked earlier and found elsewhere. They make a delicious portable package of nourishment AND they are also wonderful in a whole range of recipes. Have you cooked banana pancakes recently? Why not try this recipe (see below) and serve with bananas, dragon fruit and cream with a sprinkling of cinnamon and drizzled with maple syrup. YUM

Absent this week: Nudgel Nuts – regular customers will know that Ian and Leone are absent for two weeks as they travel through France. They return to the market on 24th April.

 

Seasonal produce forecast return dates: Tweed River Pecan nuts will return 18th April; Blueberry Fields will be back late May or early June.

 

Recipe: Pancakes served with Bananas, Dragon Fruit and Cream

1 ½ cup plain flour (gf: 1 cup buckwheat flour + ¼ cup coconut flour + ¼ cup tapioca flour)

2 ½ teaspoons baking powder

1 teaspoon apple cider vinegar

2 eggs

1 cup milk (or milk substitute – whatever your preference) or more as required to make a smooth consistency.

Mix all together by beating vigorously by hand

Serve topped with sliced lady finger bananas and Rainbow Fruit Flats dragon fruit, a sprinkling of cinnamon and drizzled with Caldera honey.
