Roasted radish and beetroot with lightly roasted tops!!?? Delicious.

What’s NEW at the Market this Week?

The Farm Tour + Luncheon at Summit Organics Farm is booked out so if you missed out on this one they will be holding another one in October.

Bio Organic Farm Tour is on 4th August at 10.00am and is FREE. Avi and Zehavit are handing over the reins to the younger generation. Their son Ooogie and his partner Shyamli (Basil) in the photos here carrying this big bunch of freshly harvested celery  – are now taking the lead on the farm while Avi concentrates on constructing their Farm Stay cabins. So come and see their unique greenhouse growing techniques for tomatoes, capsicum and in spring – cucumbers and their rows of lush greens in the paddock. No bookings are required as they are not catering. However they are providing the option for you to purchasing brunch while at the farm.

What’s GREAT at the Market this Week?

I love discovering new ways to eat fresh produce and this week I discovered an Instagram post with a recipe for roasting radish at @preventative_nutrition.  I had never considered cooking radish but have since tried and this is what I discovered. The heat from radish completely disappears when roasted and their size makes a delicious burst of moisture and flavour that just pops in your mouth. They go really well with roasted beetroot. And you can roast the tops of both root vegies as well – so no waste.

I roasted diced beetroot and whole radish after lightly searing them on the stovetop first in some lovely coconut oil. Roast until just tender – about 5-10 minutes and remove from oven. Add in the beet and radish tops and a little butter. Roast until wilted – only a couple of minutes so don’t walk away!! Serve both on the wilted tops with lightly toasted macadamia sprinkles and a dressing made from balsamic vinegar and olive oil with a dash of chilli if you like a little heat! If you wish you could drizzle over some lovely Caldera honey. It is an excellent way to enjoy these vegies in winter.

Seeing a recent photo of Summit Organics freshly picked carrots has now inspired me to revisit one of my all time favourite salads – grated carrot with ginger and orange dressing (see the Recipes and Tips page for details.
