What’s GREAT at the Market this Week?

RHUBARB is now available at Summit Organics Farm stall. Rosy red rhubarb is related to sorrel and buckwheat but in 1947 it was classified as a fruit due to the way in which it is eaten!! Jamie Oliver serves his stewed rhubarb (cooked with juice and zest of an orange and fresh ginger) with vanilla yoghurt while Tania (from Summit Organics) makes a great rhubarb crumble (see her recipe below with some modifications for gluten free preparation too).

 

 

 

 

 

 

 

CAULIS have also arrived. Will at EVEREST FARM had a few last week about a week earlier than anticipated so we were very excited. On a cool autumn evening enjoy the comfort of cauliflower cheese. YUM!

Chai Harem makes a great brekky bowl – with a mix of granola + chai seeds + yoghurt and fruit (strawberries and Kiwi fruit) plus some of their smoothie mix (secret Chai Harem mix) it makes a great start to the day. Enjoy a bowl this week.

 

Weather: Another beautiful sunny day. Temperatures will range from about 7-11 degrees overnight rising to the low 20s as the day progresses.

Citrus: Mandarins should be appearing very soon – maybe next week. A number of the farm stalls currently have limes and lemons.

Stall Holder changes:

  • Vietnamese Lotus is taking a 3 week break. Laura and Mal will be back at the market on 13th June.

Blueberry Fields will be back late early June (now confirmed) with their delicious new season blueberries.

RECIPE: Tania’s Rhubarb and Apple Crumb

Ingredients:

  • 1 bunch rhubarb]
  • 4 apples chopped into 3 cm pieces
  • 6 dates (or sugar if you prefer)
  • ¼ cup water

Crumble ingredients:

½ cup plain flour

(for GF use a mix of 1/4 cup buckwheat + 1/4 cup almond meal + 1/8cup tapioca + 1/8 cup coconut flour or if you enjoy nuts I simply use a combination of almond meal and macadamia nut sprinkles from Nudgel Nuts – mixed with melted butter and a little coconut sugar + spices as below).

1 cup rolled oats (skip the oats for serious GF)

½ cup shredded coconut

¾ cup macadamia nut, walnuts and pepitas combined

100g butter softened

1 tsp cinnamon

1tsp nutmeg

¼ cup agave syrup

1 egg

Method:

Put apples, dates (sugar) and rhubarb into a saucepan with the water and cook for 15-20 minutes or until soft. Mash up the softened dates gently stir them through the stewed apples and rhubarb so that they spread evenly. Note: drain if there is still too much fluid.

Crumble method:

Combine all the dry ingredients in a bowl then hand mix in the butter to make a nice crumble texture. Mix through well beaten egg and agave.

Sprinkle the crumble mix over the top of the apple and rhubarb mix and bake at 180 degrees for about 20 minutes until golden brown. Serve with lashings of custard or double cre

am or in Jamie Oliver style with vanilla yoghurt.
