This recipe had been kindly supplied by Jean Martinez of Artisan Wholefoods.
Makes approximately 8 to 10 fritters
1 Cup grated raw sweet potato (scrub & leave skin on)
50 g Fetta
¼ cup brown rice flour
2 spring onions – white part and most of green part (save the rest for salsa)
Handful chopped coriander
Salt and pepper to taste
Ghee for cooking
– Place all ingredients in a bowl and mix to combine.
– Warm a stainless steel sauté pan over medium heat. Add 2 t ghee and once it is melted spoon the batter into the pan, and gently spread into rounds that are less than 1 cm thick.
– Cook over a medium – low heat & serve with fresh salsa
Fresh Salsa Ingredients and method
Green onion stalks
Salt and pepper
A squeeze of lime
Combine all ingredients in a bowl, and season to taste with salt, pepper and fresh lime
