(adapted from the David Herbert’s recipe in The Weekend Australian Magazine April 04-05, 2015)
This is such a deliciously simple recipe using one granny smith apple diced and mixed with 2 diced avocados, 3 spring or ½ red onion finely diced. Mix gently to combine and fold through ½ cup coriander leaves with the juice of a small lime and a sprinkling of chilli or a tiny amount of very finely chopped chilli and season to taste.
Serve with corn chips or vegie sticks accompanied by some Nimbin Valley Dairy Cheeses and delicious Crabbes Woodfired sour dough bread.
