Recipe for this week

With this lovely warm weather and still many beautiful fresh herbs I find rice paper rolls so versatile and appealing. Prepare ingredients and place in bowls on the table so that each person can make their own roll.

Ingredients:

  • Rice paper wrappers
  • A selection of shredded meats and vegetables to use as filling (whatever appeals on the day – select from shredded chicken; pawns; shredded omelette; and lots of vegies very finely sliced or shredded)
  • Fresh mint
  • Fresh coriander
  • Thai basil
  • Vermicelli rice noodles

Directions:

1.Using a pie dish with warm water – soak the rice paper wrappers for 10 seconds
2. Place rice wrappers on a dinner plate and fill with whatever combination of ingredients appeals!!

I like to use grated carrots, mint, coriander Vermicelli rice noodles, broccoli sprouts (or sunflower), very finely shredded cabbage or rocket and organic chicken.

Fold over the sides of each wrapper. Roll up tightly into a bundle.
And dip to your hearts content in either:

  • Tamari or
  • Chilly sauce
