A new take on bananasbananas

The CSIRO has identified that ‘Eating foods rich in resistant starch nourishes your gut bacteria, which helps maintain intestinal health and reduces the risk of developing colorectal cancer’. Well here is the good news! Green bananas with 38g per 100g are very high in resistant starch and there will always be green bananas at the market.

Knowledge about feeding the beneficial bacteria in our large intestine is gaining increasing exposure as more research is being published in mainstream media. Just as the microorganisms in our soil are important for strong healthy plants so is good health gut flora. If you are keen to know more try searching “microbiome” and learn about how important feeding the good microbiomes can be for your health.

 We are fortunate to have a variety of bananas available at the market throughout the year – ripe and green – so perhaps you will be curious about trying some green banana recipes. Used a lot in the Caribbean diet, green bananas are prepared as you would a vegetable in a savoury dish. A green banana chip recipe is provided below.

Recipe of the week:

Green banana chips (Tostones)

Take a green banana and slice into ¾ slices. Fry these in a hot oil (coconut or macadamia) to a light golden colour but still slightly soft and then drain. When cool slice into thinner slices or rounds and fry again for about 3 minutes or until golden and crisp. Drain and cool then lightly salt and serve as dipping chips with a savoury dip.
