What’s GREAT at the Market this Week?
JUMPING RED ANT has new season CUSTARD APPLES at the market this week. Taking up to 20 weeks to ripen from the time the fruit first appears on the tree this super sweet fruit is ready to eat when the fruit gives slightly under the skin when gently pressed.
When cut in half it is perfect to eat straight from its own self contained package but it is also delightful caramelised and placed on a sourdough bread with Nimbin Valley feta.

BOK CHOY is often underrated or not yet tasted! But cooked with garlic (and many other innovative ways it is superb). Simply heat the oil in a large frying pan over medium heat then cook the crushed garlic until fragrant. Mix in the bok choy (cut from its stem and leaves separated) or cut into quarters then cook and stir until the green parts of the leaves turn bright green and the stalks become slightly translucent – usually about 5 minutes although it may take a tad longer. Sprinkle with Himalayan salt and maybe some macadamia dukkah (from Spice Palace); add a dash of lemon juice and serve.

School Visits: Once again it is our pleasure to host year 9 students from Tweed Valley Adventist College. The market is a stopping off point on their way to Green Cauldron Farm at Tyalgum. Their topic is Food Security. Thank you Gary Cherry for your initiative in bringing your students to experience the market and all it has to offer.
COMING SOON – Seasonal produce: Brassicas – our greatly anticipated LOCAL broccoli, cauliflowers and cabbages should begin appearing on our market stalls later this month – if the nights cool down enough!! Or early June. And coming early next month we will see snow peas.
Blueberry Fields will be back late May or early June.
RECIPE: Custard Apple Cream
- 1 cup raw cashews (soaked for 3 hours or more; drain and rinse)
- 2 custard apples, cut into segments and deseeded
- Macadamia sprinkles (Nudgel Nuts)
- ½ teaspoon vanilla essence (good quality vanilla makes a difference)
- In a blender mix all ingredients with a little coconut milk (or filtered water) as required to make a smooth consistency.
- Pour into dessert glasses and refrigerate for 2-3 hours.
- Sprinkle with lightly toasted macadamia sprinkles and ENJOY!
This is delicious served with whipped cream or coconut cream and it also makes an excellent topping for a cake or tart.
