Cauliflower and recipes 😋

What’s NEW at the Market this Week?

Cauliflowers are back and if like me you love the diversity of cauliflower recipes available now including the older style cauliflower cheese gratin through to delicious cauliflower soups, roasted cauliflower and more you will be cheering too! Once again it is a celebration of seasonal eating when a fruit or vegie you adore is BACK!!

Like many of the cruciferous vegies cauliflower is naturally high in fibre and B-vitamins as well as lots of other minerals and vitamins. We now know that a high-fibre diet has been associated with significant health benefits so apart from the great recipes there are many great reasons to enjoy cauliflowers this season.

Tomorrow I will post a recipe for dahl roasted cauliflower salad and my version of Yotthan Ottolenghi’s inspiring chilled cucumber, cauliflower and ginger soup.

Caulis are now at Everest Farm stall and Jumping Red Ant.

This week I’ve included two recipes for  a range of tasty dishes based around cauliflower:

  •  Dukkah roasted cauliflower salad with avocado dressing – see the link to Donna Haye’s recipe below
  • Chilled cucumber, cauliflower and ginger soup ( inspired by Yotthan Ottolenghi’s recipe in Simple)- click on the link below to the recipe in The Guardian

Chilled Cucumber, Cauliflower and Ginger Soup

I replaced the slivered almonds with macadamia nut sprinkles from NudgelNuts.

Spice Palace has a delicious macadamia dukkah at their stall so try this one on this recipe or perhaps their Egyptian Hazelnut dukkah 😋
