Bananas – we are so lucky with locally grown and ripened bananas at the market throughout the year. Sometimes we can take them for granted!! Do you remember the cyclone that destroyed the north Queensland banana plantations and the panic that was on to find bananas AND the prices that went through the roof. Bananas are universally loved by babies to sports people for their easily digested and absorbed carbohydrates that provide us with long lasting energy. Ignore fast foods and enjoy a banana for your mid morning munchies. And they are so versatile! They are great as a base for smoothies, ice blocks ( banana and coconut milk plus a handful of strawberries blended and frozen – YUM!), cakes, fruit salads and desserts. you further he is planning to use Wollumbin Gourmet Mushrooms and
Nimbin Valley Dairy’
s cultured cream in the sauce for one and the other will be served with a delicious tomato salsa with market basil, Grumpy Grandma’s olives and olive oil.

Lots of fresh herbs will feature! Come along and enjoy.

My Farm Kitchen – back in approx. 4 weeks. Susie has arrived back from her Tassie jaunt to discover that theRob Csoakas 2 farm hasn’t any ripe fruit. Her jaboticabas (and lovely jelly) should be ready in about 4 weeks.

Go Earth – Hamish will be back the 2nd week of each month with his locally produced compost for all you enthusiastic gardeners.

Weather Forecast is for: a warm sunny day. Overnight temperatures will fall to between 10 and 13 with daytime temperatures reaching around 30 degrees. A very warm spring day!

Recipe of the week: Flourless Banana Pancakes (or pikelets)img_4546

I love to keep it simple and quick so here is my recipe:

One ripe banana mashed and then blended with 2 well beaten eggs. Add one tablespoon coconut flour and ½ tsp authentic vanilla essence and 1/8th tsp baking powder.  Mix together. Using coconut oil or butter heated place spoonfuls (one dessert spoon full for each pikelet or 1/4 cup for a pancake) into a small pan over a medium. Flip gently when it has bubbles on most of the surface. Enjoy with your favourite topping. Delightful with Blueberry Fields blueberries and some frozen raspberries topped with cream.
