Winning Silver and sweet juicy peas!

What’s GREAT This Week?

We knew it was brilliant but now it is official! CONGRATULATIONS Damien Curtis from The Bay Smokehouse for winning a Silver at the Sydney Royal Fine Food Show for his Smoked Fish Rillette. If you enjoy smoked fish visit Damien this week. He is located beside Everest Farm inside the Pavilion.

This week we are also shining the spotlight on PEAS  – those juicy morsels that burst with flavour! Garden peas are sometimes called sweet peas or English peas. In Europe, consuming fresh immature green peas was an innovation of its “Early Modern” cuisine. They were first cultivated in 17th Century so have been enjoyed for many centuries.

The peas are sweet when young as they tend to get starchy and mealy as they get larger or if they are stored for too long after they are picked. This is why straight from the farm to you at the market means you get lovely fresh juicy peas.

Snow Peas – are known by some as Chinese pea pods as they are often used in stir-fries. Occasionally they do need to have their strings removed but when young and fresh it is usually unnecessary. Delicious sliced vertically and tossed in a fresh green salad, snow peas are also perfect for a crunchy snack and for lunch boxes. The season ends soon so enjoy them while you can from Cecil Farm and Sylva Lining Organics.
