What’s GREAT at the Market this Week?
There is nothing like the taste of locally grown capsicum and right now they are bursting with flavour! Delicious in salads and delightful roasted or charred, stuffed or stir
fried there are so much ways to enjoy this sweet yet savoury vegetable! How about a marinated roasted bruschetta or a spicy roasted capsicum hummus?
Strips of capsicum add colour and flavour to stir fried beans, cauliflower, cabbage and broccoli.
Below is a recipe for stuffed capsicum.
Strawberries have arrived – Hayden and Steve from Rainbow Fruit Flats have been busy nurturing these fussy little berries to their present deliciousness so try some this week.
RECIPE – Capsicum Stuffed with Rice and Mediterranean Spices.
- 1 capsicum per person (this recipe is for 4)
- 1 cup rice cooked
- ½ 1 cup vegies (cabbage, carrot, peas, cauliflower etc)
- 1 red onion
- 1 tsp garlic
- 1 tsp Ras al Hanout (or Chemoula for a milder flavor both available at Spice Palace)
- Grated cheese (leave this out if vegan)
- Coriander leaves finely chopped
Salt and pepper to taste
Heat oil in pan and lightly fry crushed garlic and chopped onion then add the Ras al Hanout.
Add in the diced vegies and cook for about 5 minutes the add in the cooked and well drained rice.
Cut the tops of the capsicum and remove seeds.
Fill the capsicum ¾ full and top with grated cheese
Place on a greased baking tray in a preheated oven at 180 degrees C for 10-12 minutes. Remove and top with chopped coriander.
Delicious served as an appetizer and can be varied in so many ways with different vegies added to the rice or include some grated ginger when cooking the vegies.

- bloom Edible Flowers and The Native Collection are now a pop up stall so will attend the market the first week of every month.
Blueberry Fields will be back later this month. Otto’s latest update is that they still are short on supplies and have very few buckets and as most of us love their buckets we can wait a little longer and build our anticipation.
