Gluten free Banana Pancakes

Ingredients:

2 ripe bananas

4 eggs

1/4 cup coconut flour

2 T butter (or coconut oil)

1tsp GF baking powder

a pinch salt

If you wish experiment with adding some spices – cinnamon or ginger are tasty additions ( try triple ginger – combine powdered, crystallised and fresh).

Method:

Place all ingredients (ripe bananas, eggs, coconut flour, butter or coconut oil plus GF baking powder, a pinch of salt and spices to your liking   into a food processor or bowl with a stick blender and whizz until well blended. Cook as you would for normal pancakes.

To use this mix with savoury toppings simply use ripe bananas and delete the spices. If planning a sweet topping such as maple syrup use very ripe bananas for a sweeter mix.
