RECIPE – Coriander Pesto (with mint if desired)
2 cups of fresh coriander (or 1 ½ cups coriander + ½ cup mint)
¼ – ½ cup Nudgel Nuts macadamia sprinkles
2 cloves garlic
½ cup olive oil (add more if required to get the consistency correct)
juice of 1 or 2 lemons
Salt to taste
Optional: You can also add a handful (approx 1/3 cup) of grated parmesan cheese if desired.
Place all ingredients in food processor except the oil and blitze while pouring the oil in a slow steady stream until a beautiful paste has formed. I like to taste it and adjust according to taste.
